Welcome to Seminary Hill, the world’s first Passive House-certified cidery in Callicoon, New York. River Architects designed our traditional bank barn-style cidery and tasting room overlooking 12 acres of organic orchards and the Delaware River. Here, we create and bottle our award-winning, small-batch, orchard-driven ciders from blends of over 60 apple and pear varieties grown at Seminary Hill.

Tours & Tastings

A gem among cideries in New York, Seminary Hill's sustainable design complements the holistic methods we practice in our orchards. During our weekly tours and tastings, we guide you through the entire process from graft to glass. Go behind the scenes of our production facility, stroll through the orchard, and finish the tour with a guided tasting of our ciders.

  • Cackling Hen

    A semi-sweet, easy-drinking blend. CIDERCRAFT Judge’s Pick.

  • Susan's Semi-Dry

    A semi-dry blend that still brings some sweeness.

  • Tom's Beard

    A semi-dry blend with tropical fruit notes and bright acidity.

  • Delaware Dry

    A bone-dry blend packed with a variety of apples.

  • Spycraft

    A bone-dry single varietal (Northern Spy). Naturally light carbonation.

The Seminary Hill Difference

Our orchard-driven cider reveals the distinct qualities of each year’s fruit. We grow our apples and perry pears in rocky clay at 1200’ on a south-facing slope overlooking the Delaware River. We holistically manage our orchards in cooperation with nature. The fruit we grow has the complex aromatics, sharp acids, and tactile tannins needed to ferment and blend ciders with depth and nuance. We never add artificial flavors or colors, ensuring all natural flavors and textures shine through.
